Jollof Rice & Chicken

  • Rice (preferably long grain)
  • Tomatoes
  • Onions
  • Tatashe (red bell peppers)
  • Rodo (scotch bonnet peppers) 
  • Tomato paste
  • Vegetable oil
  • Butter
  • Curry
  • Thyme
  • Salt
  • Terra Seasoning Cubes 
  • Chicken
  • Ginger & garlic powder


  • Prep: Blend your tomatoes, peppers and onions until you have a smooth mixture, and boil until most of the water is dry. When you start to see bubble holes in the pepper, bring off the heat. Parboil the rice until it is still firm, but no longer raw. Rinse off the starch and leave in a strainer
  • Cooking: Season the chicken with ginger & garlic powder, curry, thyme, onions, salt and terra seasoning cubes, and bring to a boil
  • When the chicken is soft, bring off the fire and remove from water. Fry till golden brown
  • Put a pot on fire, and when it is hot, pour in your vegetable hot. When it is hot enough, pour in the tomato and pepper mix, and add the tomato paste. Pour in the chicken stock and allow to boil. Season exra (it is advisable for it to be a little extra seasoned, the seasoning will reduce when the rice is put in)
  • When it starts to boil up, put in the rice. Add butter, and close the pot to allow it simmer
  • When the rice seems to have absorbed all the water, check with a knife for moisture at the bottom (you don’t want to stir until it is completely dry)
  • If the rice is dry, then stir thoroughly from top to bottom with a turning stick (it is said that you should never use a metal spoon to turn your jollof rice)
  • Jollof is ready!!! Serve with chicken and enjoy!
